Jubilee Chocolate Cake

What you'll need:
*Round cake tin
*Wooden poon
*Glass bowl and other bowl

What goes in it:
*175g unsalted butter
*175g  golden caster sugar
*3 eggs, beaten
*3tbs golden syrup
*175g self-raising flour
*pinch salt
* 40g cocoa powder

*100g chocolate, dark or plain
*40g butter
*2tbs water
*75g icing sugar

Start by making the icing. Place the glass bowl over a pot of simmering water and add to it the chocolate. When the chocolate has melted add the butter and icing sugar and mix well until fully combined. Take off the heat and add the water.

Pre-heat the oven to 180`C. Place the butter and sugar in a bowl and beat together until light and fluffy. Add the eggs gradually then stir in the syrup. In a separate bowl sift the flour coco powder and salt then add this to the mixture and combine. Add a little water if necessary to make a dropping consistency.  Spoon mixture into cake tin and bake in the oven for 30-35 mins, or untill springy to touch.

When cake is done take out of the over and leave to cool then cover in the prepared icing.

  1. This looks delicious! I love the technique of making everything Jubilee-themed by sticking a little flag in it - I have to get hold of some! x
